We use plenty of matcha, that is representative of Japanese tea, and mixed safflower young greens, the symbolic flower of Yamagata, an area in nothern Japan. Safflower young greens contain an astounding 100 times more polyphenols than other leaves (barley grass and morning glory leaf). It is rich in polyphenols “luteolin” and “quercetin,” which are highly valued as diet substances with excellent antioxidant power.
